vegini Soba Noodle Salad
Preparation
recipe for 2 portions
- For the dressing mix the peanut butter, soy sauce, olive oil, sriracha in a small bowl. Add the crushed garlic and ginger and some water if you want a more liquid dressing.
- Cook the soba noodles and cut the vegetable inso small pices and julienne.
- Fry the vegini Schnitzerl in a pan with some olive oil until golden brown.
- Arrange the noodles and the prepared vegetable and mix with as much dressing as you want.
- Cut the cooked Schnitzerl into stripes and place it onto the noodles on the plate. Bon Appetit!

- 140 g vegini Schnitzerl
- 100 g soba noodles
- 1 carrot
- 1/4 of a red cabbage
- 2-3 red raddish
- 1 coriander
- 1 spring onion
- 1 small pepper
- oil
Additional
- dressing:
- 2 tbsp. peanut butter
- 2 tbsp. soy saucee
- 1tbsp. olive oil
- 1 tsp. sriracha sauce
- 1 garlic clove
- 1 small piece of ginger
- water
