recipe for 2 persons


  1. For the dressing: mix all ingredients in a bowl and puree until a smooth consistency. Season with salt and pepper.
  2. Wash and peel the carrots and cut the broccoli into small chunks. Spread the vegetables on a baking tray and sprinkle some olive oil on top, season with salt and pepper.
  3. Bake in the oven at 200°C for about 10 Minuten. After the 10 min, add the vegini Cubes and let it roast until the vegetable is nicely roasted.
  4. Take the mason jars and add the avocado dressing to the bottom, then assemble the pumpkin seeds with the roasted veggies and vegini cubes as well as the salad on top! The salad is ready to go!
