vegini Empanadas


  1. Prepare the dough by mixing salt, butter alternative into the hot water. Then add the flour little by little into the liquid mixture until a smooth dough is forming. Covered in cling film, let it rest for about 1 hour.
  2. In the meantime prepare the filling for the empanadas. Heat a little olive oil and fry the finely chopped vegetables on high heat, then add the vegini ground beef and season with salt and pepper. Preheat the oven to 180° C.
  3. Cover your working surface slightly with flour and rolll out the dough 3 mm thick and cut out circles with about 12 cm diameter. Take a small brush and cover the edges of the dough circles with a little water and fill it with the vegetable- vegini ground beef mixture. Press down the edges of the half-circle an put it on a baking tray. Bake for 12-14 min. You can serve the empanadas with a side of finely chopped vegetables, which you used in the filling - enjoy!


for the dough:

  • 250 ml water
  • ½ tsp salt
  • 25 g butter alternative
  • 425-500 g wheat flour type 405-480

  • For the filling:

  • vegini ground beef
  • 1 chopped spring onions
  • 140 g corn
  • 3 tbsp butter alternative
  • 150 g courgette
  • fresh aspargus
  • carrots, red pepper
  • salt, pepper
