vegini Pulled Chunks Couscous Bowl
Preparation
recipe for 4 portions
- Add the couscous with 1 tbsp of butter alternative into a bowl. Add the hot vegetable broth and let it rest on the side.
- Preheat the oven to 200° C, meanwhile cut all the veggies into cubes and bake in the over for about 20 min.
- In the meantime for the topping finely chop the dried apricots, cranberries and mint and parsley and add to the couscous mixture. Also add a splash of orange juice to the couscous. Season with salt and pepper, as you like.
- Assemble the oven-baked veggies to the couscous in a bowl and add the prepared topping. Garnish with fresh parsley and Balsamic vinegar and enjoy!

- 140 g vegini Pulled Chunks mediterranean herbs
- 250 g Couscous
- 350 ml vegetable broth
- 1 tbsp butter alternative
- 3 tbsp cranberries
- 6-8 pieces dried apricots
- some oyster mushrooms
- 2-3 carrots
- 1 red onion
- 1 red and 1 yellow bell pepper
- 1 small courgette
- 1/2 melanzani
- 1 tbsp chopped mint
- 1 tbsp chopped parsley
- juicy of 1/2 an orange
- balsamico vinegar
- salt & pepper
