Preparation


recipe for 4 portions


  1. Add the couscous with 1 tbsp of butter alternative into a bowl. Add the hot vegetable broth and let it rest on the side.
  2. Preheat the oven to 200° C, meanwhile cut all the veggies into cubes and bake in the over for about 20 min.
  3. In the meantime for the topping finely chop the dried apricots, cranberries and mint and parsley and add to the couscous mixture. Also add a splash of orange juice to the couscous. Season with salt and pepper, as you like.
  4. Assemble the oven-baked veggies to the couscous in a bowl and add the prepared topping. Garnish with fresh parsley and Balsamic vinegar and enjoy!

  • 140 g vegini Pulled Chunks mediterranean herbs
  • 250 g Couscous
  • 350 ml vegetable broth
  • 1 tbsp butter alternative
  • 3 tbsp cranberries
  • 6-8 pieces dried apricots
  • some oyster mushrooms
  • 2-3 carrots
  • 1 red onion
  • 1 red and 1 yellow bell pepper
  • 1 small courgette
  • 1/2 melanzani
  • 1 tbsp chopped mint
  • 1 tbsp chopped parsley
  • juicy of 1/2 an orange
  • balsamico vinegar
  • salt & pepper
