vegini Breakfast Croissant
Preparation
recipe for 2 portions
- Bake the croissants according to instructions or get some freshly baked croissants from your bakery.
- Half the avocado and mash it up, season it with some lemon, salt and pepper.
- Heat up some olive oil in a pan, cut the mushrooms in slices and fry for 3-4 minutes. Add the vegini ground beef and fry for some minutes.
- Cute the croissants open and spead the avocado mash, add the rucola, the minced, mushrooms, parsley and add a dash of balsamic vinegar on top.

- 1 tray ground beef
- 1 handful of mushrooms
- 1 handful of rucola
- 2 tbsp of chopped parsley
- freshly baked croissants
- 1 ripe avocado
- 1/2 of a lemon
- salt & pepper
- balsamic vinegar
