vegini Avocado Salad

Preparation


recipe for 2 portions


  1. Cut the avocado, the red pepper as well as the spring onions into small pieces and mix with beans. Add a dash of lemon juice.
  2. For the dressing mix the Balsamic vinegar, oil, salt, pepper, and some sugar to a marinade and pour it over the rucola salad.
  3. Fry the cubes in a little oil in a pan and assemble the salad with the vegetables and enjoy!

  • 140 g vegini Cubes Italian Style
  • 100 g avocado
  • some rucola salad
  • 1 red pepper
  • 50 g red beans
  • 1 spring onion
  • 2 tbsp apple cider vinegar
  • lemon juice
  • oil
  • salt, pepper, sugar
